Hi, I've just taken the front hubs of a mahindra jeep and the brake linings fell straight of the shoes. Is it possible to buy replacement shoes or will they need to be manually relined?

As long as you have the metal part of the shoe and its in good nic they should be able to be replaced or more likely relined.
See a good brake and clutch specialist. Hamilton for example has Waikato clutch & brake specialist ltd. They would be able to do it I'm sure.
