Is the hub square?

(no im not trying to be a smart arse)

I mean is it even slightly warped or bent?
Make sure its straight/flat/square...cos im sure being slightly out of square wouldnt help.

Just a thought.

I take the bearings are new and not second hand, don't laugh, I have seen it done. Is there enough grease in the housing and amongst the bearings themselves? Have you tried backing the lock nut off just a tad to see what it does? Is only the hub hot or the whole disc, brakes not freeing up? Shit I am dying to know what it could be.

This may be a stupid question since you have done the caliper but are the brakes dragging?
Does the hub spin free?
If it spins free and there is enough grease in the bearing then surely the heat is coming from the brakes.

If it is one side only, try swaping the disk/hub assy complete with bearings with the other side and see if the hot hub moves to the other side or stays put. If the problem is in the hub it will change sides and if it is an alignment issue with the stub it will stay put.

I too am interested to discover what your fault would be.
