Im running 265 75 16 mud stars on bounty thinking about cutting every second lug off for more go in mud i only use these tyres off road what do you all think and what would you cut them with ?

Leave them as they are.
The mudstars have plenty of void space in the tread and are very useful mud tyres as they are. If you chop off lugs you might get a wee bit more traction, but you'd also lose a helluva lot of tyre wear life. And they'd be useless for the road in the future if your plans change.
