I managed to score some FJ60 hubs complete with disc-brakes and am about to throw them on a '72 FJ40.
Have never done this sort of thing before so am a bit clueless.
But am told it's pretty simple so I'll just follow the trusty Haines manual.
I was told that I'd need to replace my tie-rod ends. Is anyone able to tell me exactly what I need to get?

either get new tie rod ends and then get new tie rods too cos they are a different thickness in tube, or swap the steering arms from the 40 hubs onto the 60's. then ya can use the same steering kit with new hubs/disc set up etc..

Yip did the same in the past - 60 series complete hubs onto 40 series axle. I had to retain my 40 series manual hubs over the 60 series ones as the circlip on the 40 series spline seemed to be further out meaning the 60 series hub wouldn't slide on completely - however it should have in theory... so there may be differences depending on the year of the 40 series axle. Other than that as niblik said you should be able to put your 40 series steering arms on the 60 series hubs. If you're looking at PS then this could change what you need to do... Also, it would pay to check the top and bottom bearings in the knuckle while your there. Assuming they're ventilated you can also bolt on the Surf calliper if you after something bigger in the stopping department. Final things... brake booster/master cylinder. I had loads of problems sorting a good combination so yell out if you need any info. Other seemed to get away with keeping most of the std 40 bits but it never seemed sufficient to me and it will depend on if you're planning on getting to certified or not. Biggest mistake I did was not installing an adjustable proportioning valve to the rear early on... I was sure I could do it with various combinations! Not so

Your going to run into two problems, your 40 series steering arms wont fit the 60 series swivel hubs, second is your diff will have the early coarse spline cvs which are to short to use with the disc setup, so you will need to put later model fine spline cvs in, but because there slightly bigger they dont fit into the diff housing so you will need to grind the housing slightly.

If you need to get some new CV's, do you want some 27 spline Longfield CV's, no probs with breakage in the future.

Thinking back about 20 years
I machined up cronical spacer tubes to fit the 40s tie rod ends, into the 60s arms . about 1mm wall thickness.
