I've scored some near new bridgies with tubes on rims for a decent price and want to know if its all good to run them with the tubes on the road when my other tyres are worn

yeah mate all good I have just worn out a set of 33 inch Bridgestone Deulers and have had tubes in them from new, I had the 10r15 heavy duty tubes though don't run normal car tubes in them, I think they cost about $40 each
