I have a 70 series landcrusier and was wondering how you would replace the bushes in the shackles for a leaf sprung truck??

Pretty straight forward job.
Have a look under there and see how they're bolted in. To undo them jack the chassis up until weight comes off axle. (use axle stands before going under)
Remove nuts, remove hanger, replace bushes, refit together. Easy as

If there nolathene bushes stick them in with a good coating of grease to get them well lubed so everything can move freely
check the shackel and fixed pins for rust and clean them up before refitting or they act like files on the new bushes and cut them down in 2 seconds flat
... even better if you've got a few spare bucks shout the truck some greasable pins and shackels

So I just jack the chassis up from the ground you mean?

If the bushes you are taking out are the old school rubber and steel type, you may need to take the spring off to get them out - as they can be fairly stubborn
