Price is a bit above the odds, but vehicle is basically what I'm looking for. Would have to fly down and drive back, so wouldn't mind if someone could give it the once over before I do...

The description sounds pretty honest, and obviously hasn't put you off, so what exactly do you want checked? Test drive, motor, cooling system, suspension? I doubt it is totally flogged out , given previous usage.
I can arrange a local garage to do a mechanical inspection if you wish.

just be aware that that truck lives right at a local beach, so salt spray etc.

Yes it does seem honest, But you're always able to get a better feel for it in person. 7k isn't pocket change for me so want to be sure.
Yeah just a test-drive, make sure it makes all the right noises. Starts easy etc. I'm pretty familiar with the vehicles so know what's likely to come up for maintenance, just how much has already been done.
