Have you got a full floating or semi-floating rear end?

Either way its not hard to do. If full floating - yeah you got the idea (undo bolts on hubs and pull out axles), if semi-floating just take the plate off the back of diff pull out clips holding in axles from there.

Then just remove drive shaft and diff head - and replace in opposite order. Simple

This is a full floating axle with the hub sticking out, a semi-floating axle dosent have a hub and the end of the axle is flush with the inside of the rim, dissasembly is as MNC said

The best thing you could do is buy a workshop manual off trademe. Should get one for under $20 and it'll explain with pictures what you should be doing. That's how I've learned - and if there aren't enough pictures there are always heaps of cruiser guys on here to help out :D
