That of course would be illegal, but hypotheically...

If you track the odometer stepper motor wiring then just cut the wire (or the track on the circuit board), solder in a small switch that can be hidden under the dash (and I mean well hidden, if it is ever found during a wof or anything...). But remember that a vehicle that turns up for a warrant without ticking over any km's is going to look suspect.

Of course if you were to use this 'just when offroad' so you didnt have to claim back road user tax, I guess it would be a ligitimate excuse to do it (pushing it here I think).

So thats it hypothetically but of course you wouldnt do it you were just curious and had heard about it and thought that cant be done. It can be done but your not supposed to... :D

hypothetically you could use a solder sucker and suck the solder off one terminal on the back of the circuit board then solder a piece of wire(for a hypothetical switch)on to the top of the exposed terminal across to the other end of the track on the circuit board(which hypothetically could be a diode )then when you hypothetically sell it later on just resolder the terminal removing your hypothetical wire and no one is the wiser hypothetically speaking of course :)

Would this cut of the odometer only, or rev/speedo too?

If done right (if your sustem allows) it cuts off only the motor that drives the odometer and leaves the speedo intact, so you can still see speeds.

If it cuts the speedo then get a cheap gps, although does the speedo affect the ECU in some way.

if you are going to do it you need to put a switch in because cops can pull you up and ask you to drive up the road and come back, if your spedo has not changed you are in for a big ticket.

Selling a vechicle that does not truely show its actual distance travelled is a criminal offence so you you cant get away with saying its for use off road only.

Just convert to a petrol

I suspect that even though the speedo will stop the ECU will still be noting the milage driven & still show the timing belt light when its due.
