I had trouble insuring my 40 cos most insurers think its too old

I eventually went with "classic cover" but not sure if they cover off road use

Definitely have a talk to barleys. I had some ginormous quotes to get my 80 series covered and barleys came back with a very reasonable quote and its covered offroad

I am with AMI, and I have a clause in my insurance that says I am covered off road but have to pay a $1000 excess. $250 on road. Several years ago it was badly damaged by a shitty toyota rolling back into it on Worsleys Spur. This is a legal road but is definitley a grade 5 track. I only had to pay the $250 excess as it was a legal road. The NZ road code classes rivers beds (dry parts) and beaches as roads. It would be very difficult for an insurance company to say I was off road. Off road means farm tracks, non-paper roards (ie logging tracks). I have tested the clause. I am motre then happy with my insurance cover. They also know about every mod the truck has as well and insured for agreed value.
