I am looking at mounting a tow hook on the rear of my prado. The best place I have found is on the towbar chassis mounts as per pic.
Any problems with mounting it there anyone can see?

Check the bolts on the towbar setup - tow bar is usually set up for trailer loading which is a lot less than a snatch recovery. Other point is any hook low down and underneath can be a pain to access when you are stuck in water or mud. If its a reciever type hitch then a hook on a snd hitch is a good option (assuming the bar is up to it). Thats what I had on a 96 Prado and it was good.

It is a receiver type hitch mount so that could be an option. The bar is rather study and says 2800kg towing capacity.

Somethink like this but with a towbar option as well as as a removable hook option.

I just did the exact same thing as your option 1 on my wagon, and was told at a run it'ld be sweet as, put some photos on here also.
And supercheap has those hitch recevers for something like $40.
Or like me, just remove the tow ball and put a 4.75 ton shackle in the hole.
