Has anyone with an accurate water temperature or EGT gauge noticed their before and after temperatures after disabling their EGR system? (especially the 1KZTE) it is said by some that part of the EGR system's function is to reduce combustion temperatures and I don't want to cook the head...

Ive heard the opposite that temps will be reduced as you are no longer feeding hot gasses into the cylinders.

egr reduces PEAK flame temps. however as the hot egr removes some of the cooling it increases the average temp (egt).
however none of that really matters as egr is off when engine is at max heat (ie full throttle). however egr valves are known to stick open, so its always best to block them off not block the vac tube.

I removed my EGR stuff completely a few years back and noticed no rise in EGT temps...

I removed mine completely right back to the plugs. If you worried about temp there are things to do like water mist spray and intercoolers.
