how the hell did they manage that?Q???!?!?! thought initally they might winching off the side of the truck or something, but the strap is on the back...

I thought it quite simple, either under re-coil or reversing, they had a bit much left or right hand down on the steering wheel and the left front or rear wheel climbed the bank beside the track and over it went, aided by the fully stacked roof rack cage.
Watched it 3 times to come up with this theory.
Hard to see angles and gradients on film.

Yeah, looked like they have reversed back and ridden up the bank, or at least it looks that way, he was some distance ahead when first trying to tow, but quite close when he rolled

Just looking at that video again what is that on the back wheel of the ute, it looks like something restricting the back wheel from turning Iam right or Iam seeing something different?

I thought the same, but is it just the mudflap? I looked a few times as that was my first thought too.
