think ive decided to chop my fibreglass canopy on my surf into a ute, im not going to completly get rid of the canopy, i want it so theres a little room behind the seats, cab-plus style.. i can do all the panel work myself, so easy enough to do
will i need a cert?
any dos and donts?
im just not needing the wagon style, and open ute is more practical for recovery gear being easily accessable, then i can easily fit a roll bar etc

The fiberglass canopy isn't structural so chopping it up should be fine. I used to get warrants on my Surf with the canopy removed. It may pay to ask a WOF agent just to be sure though.
I'd cut a sheet of perspex to replace the rear window cut the centre out of the canopy and reattach it.
The other way would be to make a canvas rear wall with a window, gives you the option to remove it if you want
