Hi guys,
My seats are a bit worse for wear so am looking at replacing them all (driver, passenger and rear seats).
My concern is that the back seats have carpet that is "one piece" that is on the floor of that boot and runs up the rear seats. If I am fitting new seats I assume I just have to sacrifice this and cut the carpet off?
Are the seats an easy thing to do? Especially the rears?

Haven't done it myself but I would expect that you can unclip or remove the carpet without cutting.
Either the carpet will come off the back of the seat or remove from rear floor.
It will also depend on what your replacement seats come with as well.

carpet should just unclip of the back of the seats

X2 it unscrews from a trim piece

as above, two screws and it comes off.
